Apple Cider Beef Stew

Ingredients
  1. 2lbs beef stew meat, cut into 1-inch cubes
  2. 2 tbsp vegetable oil
  3. 3 cups Ryan's Apple Cider
  4. 2 tbsp apple cider vinegar
  5. 2 tsp salt (optional)
  6. 1/4-1/2 tsp dried thyme, to taste
  7. 1/4 tsp black pepper
  8. 3 medium potatoes, peeled and cubed
  9. 4 medium carrots, cut into 3/4-inch pieces
  10. 3 celery ribs, cut into 3/4-inch pieces
  11. 2 medium onions, cut into wedges
  12. 1/4 cup all-purpose flour
  13. 1/4 cup water
Instructions
  1. In a Dutch oven, brown beef in oil and drain. Add cider, vinegar, salt if using, thyme and pepper. Bring to a boil. Reduce heat, cover and simmer for an hour and 15 minutes.
  2. Add the vegetables and return to a boil; boil and stir for two minutes. Reduce heat, cover and simmer for 30-35 minutes or until beef and vegetables are tender.
  3. Whisk together flour and water until smooth. Stir into stew, making sure there are no clumps. Bring to a boil; boil and stir for two minutes.
